Nicolas Maillart is recognized as one of the most innovative winemakers of his generation. Since taking over the family business, he has continually transformed the approach to his vineyard, including converting the vines to organic farming and reintroducing Petit Meslier, an indigenous grape variety that had nearly disappeared.

The history of this family estate dates back to 1753, when the name of a Maillart winegrower first appeared. Since then, the family's dedication to winemaking has remained steadfast, and today, the estate is managed by the ninth generation of the family.

In 2003, Nicolas, who is both an engineer and an oenologist, returned to the estate, continuing a nearly 300-year-old tradition.

Today, the vineyard of the House covers 15 hectares, all located in the Montagne de Reims. At Nicolas Maillart, Pinot Noir is the dominant grape variety, occupying 65% of the hillsides. Chardonnay and Pinot Meunier are also present, along with the rare Champagne grape variety, Petit Meslier. Under Nicolas Maillart's guidance, this native grape has made a comeback in the estate's vineyards. The reintroduction of Petit Meslier, while not very productive, offers unique aromas and is the result of Nicolas's long-term dedication to selecting the most favorable plots.

Special attention is given to winemaking as well. All grapes are vinified separately, allowing the characteristics of each terroir to shine through. Factors such as harvesting at the right maturity, controlled yields, and the origin of the grapes enable Nicolas Maillart to produce wines with a strong identity.

The wines do not undergo malolactic fermentation; they are generally neither filtered nor fined, and are very lightly sulphured, if at all. They mature for approximately nine months, enhancing their richness. However, the process doesn't end there; long aging allows Nicolas Maillart champagnes to develop unique expressiveness.
